Bolognese with minced vegetables
Ingredients
- 1 onion
- 2 cloves garlic
- 1 carrot
- 1 zucchini
- 1 red pepper
- 400g minced meat
- 1 can of peeled tomatoes
- 1 tablespoon of tomato puree
- 1 bunch of basil
- Olive oil
- Salt pepper
Instructions
- Finely chop the onion and garlic with a chopper.
- Peel and finely chop the carrot with a chopper.
- Cut the zucchini and red pepper into small dice using a food processor .
- In a hot skillet, heat some olive oil and brown the minced meat in it until cooked through.
- Add the chopped onion, garlic, carrot, zucchini and red pepper to the pan and cook for 5 minutes.
- Add the peeled tomatoes and tomato puree to the pan and mix well.
- Let the sauce simmer for 20 minutes over medium heat, stirring regularly.
- Add the chopped basil and season with salt and pepper.
- Serve the bolognese hot, accompanied by pasta or rice.
